Cambozola Cream Cheese Crusted Halibut by Chris W. Moy (Serves 2)
 
1 1/2 halibut filets
1 container Cambozola cream cheese
1 sweet onion (chopped)
1 teaspoon of lemon pepper
2 tablespoons of fresh parsley (chopped)
1 tablespoon of fresh squeezed lemon juice
1 cup fresh breadcrumbs
Salt to taste
Preheat oven to 350 °F. Coat 8x8 inch baking dish with cooking spray. Place halibut (single layer) in dish. Mix the Cambozola cream cheese with the onion, lemon pepper, parsley and salt. Pour everything over halibut and drizzle with lemon juice.
Bake for 12 minutes, and then top with the breadcrumbs. Bake another 3 minutes or until the breadcrumbs are brown and the halibut is firm and can be flaked with a fork.
