Split foccacia horizontally. |

Place roast beef on bottom half of bread. |

Top with thinly sliced Cambozola, then arugula and tomatoes. |

Drizzle with olive oil and add salt and pepper to taste. |

Cover with top half of bread. |

Cut into wedges or squares to serve immediately, or wrap well in foil or plastic wrap for later use. |
